St. Patrick’s Day is always a fun day for kids and for people that are kids at heart. What other day do you get to pinch someone who is not wearing green? St. Patrick’s Day treats are also fun to make and share with family and friends. Here are a couple of fun recipes to make for your kids for St. Patrick’s Day this year.
St. Patrick’s Day Soda
Here is a fun green St. Patrick’s Day drink you can make for your kids. There are many ways to turn a drink green, but all you have to do for this easy drink is make some green Kool Aid and freeze the Kool Aid in an ice cube tray (you’ll want to do this step the day before).
When you are ready to serve the drink, place the green ice cubes in a glass and pour Sprite or 7-Up over the green ice cubes. As the ice cubes melt the entire drink will turn green.
Lucky Charms Bar Cookies
This recipe is basically the same as making Rice Krispie Treats but using Lucky Charms cereal instead.
In a large sauce pan, melt 4 tablespoons marshmallows and 4 cups miniature marshmallows over medium heat, stirring constantly. Remove from heat and stir in 6 cups Lucky Charms cereal. Be careful not to stir too much or the marshmallows in the Lucky Charms cereal will start to melt.
Use a buttered spatula to spread the cereal mixture into a greased rimmed cookie sheet or 13×9-inch baking dish. Let set until cooled and cut into squares.
If your family enjoys lemon meringue pie, you can make a green lemon meringue pie for St. Patrick’s Day by adding a few drops of green food coloring to the lemon mixture.
1 c. + 6 tbsp. sugar
2 tbsp. flour
3 tbsp. cornstarch
1/4 tsp. salt
1 1/2 c. water
Juice of 2 lemons
2 tbsp. butter
1 9-inch baked pie crust
Preheat your oven to 350 degrees.
To prepare the pie filling, use a whisk to stir together 1 c. sugar, flour, salt, and cornstarch in a medium sauce pan. Stir in the freshly squeezed lemon juice and water. To make the lemon filling green, add a couple of drops of green food coloring until you like the color of it.
Cook the sugar and flour mixture over medium heat until it comes to a boil. Stir in the butter.
Separate the 4 eggs into one bowl for the whites and one bowl for the yolks. Carefully stir 1/2 cup of the hot sugar mixture into the egg yolks. Use the whisk to stir the egg yolk mixture back into the sauce pan. Continue to cook until mixture is thickened like pudding. Remove from heat and pour the lemon mixture into the baked pie crust.
Next it’s time to make the meringue. In a large glass or metal bowl, use your mixer to beat the egg whites until frothy. Slowly add the 6 tbsp. sugar and continue beating until stiff peaks form.
Use a spatula to spread the meringue on top of the pie, making sure to spread completely to the edges of the pie. You don’t want any lemon showing, it needs to be completely sealed to bake correctly.
Place pie in the preheated oven and bake for 10 minutes. The meringue on the top should be a nice golden brown. Cool.
